In this class, we’ll cover how to provide excellent culinary services on the road, from planning around resources, restrictions, and travel, to safety, allergens, and kitchen (or hotel room) basics, to plating and table service for the road, and overall how to eat cheap, delicious, easy, and healthy while traveling, with some quizzes along the way. On the doc cam, we’ll cover some napkin folds, and briefly go over the table setting chart and a few of my favorite travel friendly recipes that are sure to please. We’ll wrap up with a brief Q+A session.
